Day 2 - let the food photos commence



Cheese!  Okay, so it's a bowl of soup with cheese on top.  This is the sweet and spicy squash and chickpea soup from Mexican Food Made Simple - one of my favourite recipe books.  I didn't have any of the Lancashire cheese it recommends so it's mature cheddar.  I'm still not totally sold on the idea of soup as a main meal, but this was pretty substantial, and the chickpeas make it filling, plus the fact that I've got 'spare' calories if I get hungry later on and fancy a jaffa cake or two!
